The Basics of Italian Cookery


This course will teach you how to make delicious Italian dishes from scratch and is suitable for beginners as well as more competent cooks who would like to increase their repertoire. You will learn about regional specialities, some history of Italian food, how to source ingredients and plenty of new recipes and techniques.

The course will include:

Fresh pasta and sauces
Stuffed pastas (ravioli/tortelloni)
Proper Italian pizzas
Polenta (wet and grilled)
Osso Buco
Frangipane tarts

After compelting the course you should be able to prepare a variety of Italian dishes from scratch and your confidence in the kitchen will have grown. You will have improved knife skills and a wide knowledge of Italian recipes and ingredients.

For information - basic ingredients will be provided, but you may be asked to provide some extras on certain weeks.

  • 1 Grey bib apron
  • 1 Grey skull cap
  • 1 3" Giesser paring knife
  • 1 6" Giesser cooks knife
  • 1 Oven cloth

You will be sent an order form once we receive your booking but please note it is advised you do not order until you receive your email confirming the course is running with your joining details, usually one week prior to the course start date. If you order before this and we have to cancel the course, CCN cannot be held responsible for your order.

Alternatively you are welcome to bring your own items from home if you prefer. Please note that we have a limited supply of skull caps available if you require one.

Please note that course dates will be issued depending on demand and that courses may be cancelled if minimum numbers are not met.
